Storage

Deli meats should be consumed within 2-3 days of opening, even if the date is different than the “best before” date on the package.

All products that require refrigeration should be stored at 4° C (40°F).

No, they do not require any refrigeration, even after opening.

General

All of our meat products are gluten-free. We also have some gluten-free tortillas. We recommend that you read the ingredient lists carefully.

Our gluten-free tortillas are made with rice flour, making them not as pliable as those made with wheat. We find that our gluten-free tortillas work best when heated. This can be done by wrapping the tortillas in paper towel and heating in the microwave for 10-15 seconds per tortilla.

Yes. Even though meat processors are not required to pass Federal government inspection before their goods can be offered for sale to the public, Grimm’s Fine Foods has chosen to adhere to strict guidelines set out by Agriculture Canada. While it can be more expensive and labour intensive, we believe the quality of our products and the health of our customers is well worth the extra effort.

Grimm’s products are naturally smoked in traditional style smoke houses. We use all natural North American hardwood chips (Alder, Beech and Maple) and no artificial ingredients (liquid smoke).

Grill to Perfection

  • Place smokies or European Wieners on the barbecue grill indirectly above the heat source, cook slowly on medium heat for up to 10 minutes, turning frequently. For best results, do not overcook.

​Stove-top Heating

  • Option 1: to heat in pan, add a half inch of water to pan, cover and simmer for 10 minutes.
  • Option 2: on stove top, bring a pot of water to a boil and remove from heat.  Place Smokies or Wieners into the water, cover with lid.  For Wieners, let sit for 6-7 minutes, for Smokies, let sit for 8-10 minutes.

We use a collagen casing on all of our pepperoni products. Collagen originates from beef and is completely edible. Collagen is used for pepperoni as it allows for a more uniform product in size, shape and appearance.

All of Grimm’s meat products are fully cooked and ready to eat. The only exception is our line of Fresh Sausages made with 100% Verified Canadian Pork™ raised without the use of antibiotics.

Ingredients

Sodium phosphate is a generic term for a variety of salts of sodium and phosphate. Phosphates occur naturally in meat but dissipate during the curing process. We simply add it back in to optimize the texture of the meat.

The purpose of adding sodium nitrite is to inhibit the growth of botulism as well as enhance the natural meat appearance of ham and sausages. Cultured celery extract is a natural form of nitrite.

We use Sodium Erythorbate, which is similar to Vitamin C, to enhance the natural meat appearance.

The spices used in Grimm’s family recipes are a closely guarded secret. We will only reveal that we use whole, natural spices such as Pepper, Anise and Coriander in addition to many fresh ingredients that lend a wholesome flavour to our products.
