Fully-Loaded Beer Queso Dip with Jalapeno & Cheddar Poppers

Ingredients

  • Grimms Jalapeno & Cheddar Poppers (1 package)
  • Beer (1/2 cup)
  • Butter (1/4 cup, melted)
  • Flour (3 Tbsp)
  • Red Pepper (1, diced)
  • Jalapeno (1, diced)
  • Sour Cream (1 cup)
  • Marble Cheese (1/2 cup, cubed)
  • Mozzarella Cheese (1/2 cup, cubed)
  • Chorizo Sausage (2, without casing)
  • Black Beans (1/2 cup)
  • Diced Tomatoes (1/2 cup)
  • Shallot (1, diced)
  • Garlic (2 cloves, minced)
  • Cajun Seasoning (2 Tbsp)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your grill or oven to 400 degrees. Next, using an aluminum pan or grill safe dish, add your melted butter and flour. Mix it together, creating a roux. Place your pan onto your grill or oven and add your beer.  
  2. After about 5 minutes of combining the roux and beer, add ALL other ingredients except your poppers. Place on your grill without mixing. After about 20 minutes, crush up your sausage into small pieces and mix your ingredients all together. Place back on your grill for another 20 minutes or until it’s bubbly and delicious.
  3. While your queso is grilling, let’s cook our Grimms Jalapeno & Cheddar Poppers. Preheat a pan or griddle to a medium heat. Add your poppers and grill for about 7 minutes before flipping to the other side, and cook for another 7 minutes.
  4. Bring the dish all together by dipping your poppers into your fully loaded beer queso dip and enjoy!
