Ingredients

For the Avocado Garlic Dressing:

  • 1 ripe avocado
  • 1 clove garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2-3 tbsp water (to thin, as needed)
  • Salt & pepper to taste

Instructions

  1. In a blender or food processor, combine the avocado, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth. Add water 1 tablespoon at a time until you reach your desired consistency – it should be creamy but pourable.
  2. Place the chopped romaine on a large plate or in a bowl. Top with halved cherry tomatoes, cucumber, and egg.
  3. Roll or fold the slices of Grimm’s Montreal Roast Beef and place them on top of the salad.
